
Hot-Smoked Mānuka Honey Salmon

Ingredients
- 1 side fresh South Island salmon, pin-bones removed
- 100g brown sugar
- 1 lemon, sliced
- 1 red onion, sliced
- salt and pepper
- BeeMade Mānuka Honey
- Smoking chips (Mānuka if available)
Cooking Instructions
- Place salmon on a sheet of baking paper, then on top of a sheet of tinfoil. Cover the salmon with a generous drizzle of Mānuka honey, sprinkle with brown sugar, salt, pepper and red onion. Finish with lemon slices.
- Place Mānuka chips in the base of your smoker, and light as per instructions. Place salmon in smoker, cover lid and smoke for approximately 20-30 minutes. Serve with fresh salad and toasted ciabatta.
