Ingredients

  • 1 side fresh South Island salmon, pin-bones removed
  • 100g brown sugar
  • 1 lemon, sliced
  • 1 red onion, sliced
  • salt and pepper
  • BeeMade Mānuka Honey
  • Smoking chips (Mānuka if available)

Cooking Instructions

  1. Place salmon on a sheet of baking paper, then on top of a sheet of tinfoil. Cover the salmon with a generous drizzle of Mānuka honey, sprinkle with brown sugar, salt, pepper and red onion. Finish with lemon slices.
  2. Place Mānuka chips in the base of your smoker, and light as per instructions. Place salmon in smoker, cover lid and smoke for approximately 20-30 minutes. Serve with fresh salad and toasted ciabatta.
